Banana Pancakes

I wanted to try something new this morning and had some ripe bananas.  I found this recipe on All Recipes . com.  The kids were a little leery about trying them but with some encouragement they did and liked them.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed


  1. Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

    We had the scouts make what we have dubbed "Elvis" pancakes. We had a bunch of bananas that we added to the batter and cut up some hershey bars into chunks and cooked them up, but what made them "Elvis" was that we didn't have any syrup, so we looked in our box of provisions and discovered that we had peanut butter, so we leaders suggested they use that as the topping. Needless to say they were a big hit with the boys and have become a regular item on campout menus. I think some even added some strawberry jelly.
