Chicken Won Ton Bites

Adaptation from my Aunt Julies recipe

It was one of those nights where dinner wasn't planned ahead so I rummaged through the fridge and cupboard and created these...sort of!  My aunt Julie makes something similar but uses ground beef.  I had cooked chicken in the fridge so I decided to change it up a bit and use that.  They were a hit.

Ingredients:

won ton wrappers (found in the produce section)
1 lb. cooked shredded chicken
1 1/2 c shredded cheddar cheese
1 1/2 c shredded mozzarella cheese
1 pkt dry ranch seasoning mix
1 cup milk

Directions:

Take the won ton wrappers and place them inside a small muffin tin.  Bake them at 350 for 5 to 7 minutes until slightly browned.  

While those are baking, mix the cheese, chicken and ranch mix together.  Once blended, pour the milk over it and stir to moisten all ingredients.  



Take the won ton out of the oven and fill each one with the cheese/chicken mixture and return to the oven until heated through and melty...about another 5 to 7 minutes.  I had enough filling to make about 30 or so of them.

**the recipe my aunt uses is:  1 lb cooked ground beef, black olives, red peppers, cheeses, ranch and milk...follow same directions as above**

Chex School Fuel

This is a great recipe for a quick snack.  The kids (and me) just love it.  When I make banana bread I usually put 1/2 a bag of choc chips in with it.  Well, that left over 1/2 bag is perfect for this recipe!  You can change it up too and add in other things if you so desire but we actually don't mess around with this one.  We like it just the way it is.  Once is has chilled on the pan in your fridge for a bit to set up the chocolate, just break it up and store in an airtight container for easy access.  This recipe is from:  Chex.com

Ingredients:

4cups Corn Chex® cereal
4cups Rice Chex® cereal
3/4cup packed brown sugar
6tablespoons butter or margarine
3tablespoons light corn syrup
1/4teaspoon baking soda
1/4cup semisweet chocolate chips
Directions:

1.Into large microwavable bowl, measure cereal; set aside. Line cookie sheet with waxed paper.
2.In 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on High 1 to 2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Pour over cereal, stirring until evenly coated. Microwave on High 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes. Break into bite-size pieces.
3.In small microwavable bowl, microwave chocolate chips uncovered on High about 1 minute 30 seconds or until chips can be stirred smooth (bowl will be hot). Drizzle over snack. Refrigerate until set. Store in tightly covered container.

Snow Popcorn

This past Christmas my good friend Alaya introduced me to a naughty new snack. We have always loved popcorn in my house and we usually eat it with junior mints because that is how we always did it when I was a kid, and the salty sweet is to die for. Well, this simple recipe kicks that up a notch. It seems no matter how much I try to cook healthy and waistline friendly foods I am always drawn back to something sweet and not so waistline friendly. This is such a yummy treat to have when watching a movie or playing a game. This Christmas I gave some away to family and friends and I think they liked this more than the presents I got them so next year maybe I'll save my money and make some extra Snow Popcorn. :)




Ingredients:



1 bag of white chocolate chips


honey roasted peanuts


8 cups popped popcorn


plain M & M's


salt


Directions:


You can use microwave popped popcorn but my favorite is the homemade and I love the Whirley Pop so that is what I use. Pop your popcorn and set it aside. Melt the white chocolate chips in the microwave at 30-40 second intervals stirring in between times until completely melted. In a large bowl put half of the popcorn or all of it depending on the size of your bowl and add the melted chocolate and mix thoroughly. Once that is mixed completely sprinkle with salt and then add M & M's and peanuts to taste. Repeat steps until you have used up all of your popcorn. On a cookie sheet spread out this mixture so it can cool and when the chocolate has set it is ready to enjoy!!!
