I am not a corn bread lover. It is always dry and crumbly and I just don't enjoy it. UNTIL, I had it again recently at a restaurant. When I lived in Utah there was a restaurant that served the most delicious corn bread to everyone while they waited for their meals. I had the privilege of eating there this last weekend and being reminded that there are actually good corn bread recipes! I searched online to see if I could find a copy-cat recipe and this is what I found. I am very pleased with it.
Best served warm with honey and butter or honey butter
Ingredients:
1 cup margarine ( I used butter)
1 1/2 cups sugar
4 eggs
2 1/4 cups flour
3 tsp. baking powder
1 1/2 cups cornmeal
3/4 tsp. salt
2 1/4 cups milk
Cream the margarine and sugar. Add eggs, one at a time. Add dry ingredients (flour, baking powder, cornmeal and salt). Stir in milk until well combined. Pour in a greased 13x9 pan and bake at 375 degrees for 35-40 minutes.
